&lt;p&gt;1 medium banana, mashed&lt;/p&gt;
&lt;p&gt;1/2 cup pumpkin &lt;/p&gt;
&lt;p&gt;1 egg&lt;/p&gt;
&lt;p&gt;1/8 to 1/4 cup of maple syrup, depending on sweetness of banana&lt;/p&gt;
&lt;p&gt;1 tsp vanilla&lt;/p&gt;
&lt;p&gt;1/2 cup quick oats&lt;/p&gt;
&lt;p&gt;1/2 cup whole wheat flour&lt;/p&gt;
&lt;p&gt;1 tsp baking powder&lt;/p&gt;
&lt;p&gt;1 tsp baking soda&lt;/p&gt;
&lt;p&gt;1 tsp cinnamon&lt;/p&gt;
&lt;p&gt;1/2 tsp nutmeg&lt;/p&gt;
&lt;p&gt;1/4 tsp ground ginger&lt;/p&gt;
&lt;p&gt;1/2 tsp allspice&lt;/p&gt;
&lt;p&gt;2 tsp wheat germ&lt;/p&gt;
&lt;p&gt;2 tsp ground flaxseed&lt;/p&gt;
&lt;p&gt;1/4 cup chopped walnuts (optional)&lt;/p&gt;
&lt;p&gt;1/4 cup raisins (optional)&lt;/p&gt;
&lt;p&gt;Preheat oven to 375 degrees. Mix wet ingredients and dry ingredients in separate bowls. Add wet to the dry and stir until just combined. Pour into greased or lined muffin tins and pop into the oven for 14-20 minutes.&lt;/p&gt;
&lt;p&gt;These muffins turned out okay — I’d say they’re worth making! If I were to adjust the recipe, I would substitute 1/2 the banana for more pumpkin and add agave or honey on top of the maple syrup to sweeten. They weren’t flavourful enough, in my opinion, and I’d definitely recommend adding the walnuts and/or raisins to give them bursts of flavour. These are good warm, with a cup of tea and some nut butter spread on top.&lt;/p&gt;

&lt;li&gt;kiwi berries &lt;/li&gt;
&lt;li&gt;tortilla chips &amp;amp; guacamole &lt;/li&gt;
&lt;li&gt;2 beef flautas &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;snack:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 small brownie &lt;/li&gt;
&lt;li&gt;1 cookie (from the hotel) &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;dinner:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;greek chicken&lt;/li&gt;
&lt;li&gt;lentils &amp;amp; rice &amp;amp; pita &lt;/li&gt;
&lt;li&gt;salad with tomato and cucumber &lt;/li&gt;
&lt;li&gt;a few soft cinnamon pretzel balls&lt;/li&gt;
&lt;li&gt;1/2 a yellow cupcake &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;xc practice: beginning of the overnight&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;drills/stretching&lt;/li&gt;
&lt;li&gt;~1.5 miles, then it thundered and we had to go back to the hotel &lt;/li&gt;
